Abstract: Dabai (Canarium odontophyllum Miq.) fruit is an underutilized fruit found in Borneo, Palawan and Sumatra.[cite: 11] Based on our knowledge, there no literature reviews that exist about the characteristics of dabai seed oil as most of people does not know that the seed of dabai is in the hard-shelled kernel of the fruit as the fruits itself are still underutilized.[cite: 11] The aim of this study is to determine the physiochemical, study of crystal morphology and antioxidant properties in Canarium odontophyllum seed oil.[cite: 11] Thus, preliminary study was conducted in order to determine the physicochemical characteristic (peroxide, iodine value, refractive index and slip melting point), crystal morphological study, antioxidant and phenolic content of dabai seed oil.[cite: 11] The extraction of dabai oil was done by using Soxhlet method while for antioxidant, the assay used are ferric reducing antioxidant power and the total phenolic content are using Folin-Ciocalteau method.[cite: 11] Upon analysis, the iodine and peroxide value obtained is $39.34 \pm 1.25$ g iodine/100 g and $14\pm2.0$ mEq peroxide/kg.[cite: 11] For refractive index, the value obtained is $1.464\pm0.00$ and its slip melting point is $35.8\pm1.04$.[cite: 11] In crystal morphological study, there are a large form of crystals with the size range of 20 to 25 µm and the other crystal shape are round and doted spherulites with the size range of 0.5 to $5~\mu m$.[cite: 11] In addition to that, the amount of ferric reducing power dabai seed oil detected in this analysis is 3.62 mMol of $Fe^{2+}/g$ and its phenolic content is 21.73 mg GAE per 100g of samples.[cite: 11] From the finding, the characteristics of dabai oil are almost similar to cocoa butter and palm oil and this might be useful in utilizing this fruit seed oil as another alternative in creating new vegetable oils by the method of blending in the future studies.
